How to make Rajasthani Haldi Ki Sabzi Recipe)
Essential Material:
Raw turmeric lumps – 1 bowl
Onion – 1
Peas – 1 cup
Yogurt – ½ kg
Garlic-5-6 buds
Green Chilli-2-3
Green coriander – 2 tablespoons
Desi Ghee – 250 grams
Asafoetida – 1 pinch
Cumin – 1 tsp
Red chili powder – 1 tsp
Coriander powder – 2 tsp
Black Pepper – 1 tsp
Fennel powder – 2 tsp
Cinnamon – 2 pieces
Cardamom-2-3
Salt – as per taste.
Method of preparation:
-First of all, peel the turmeric lumps and grate it well. Now finely chop the onion. Now heat ghee in a pan and add turmeric to it and fry it till it becomes light golden. When it is cooked, remove them and keep them separate. Now add peas in the same ghee and fry it lightly and remove them too. Now add curd to a bowl and add red chili and coriander powder to it.
Now place a pan on the gas and add ghee to it. When the ghee becomes hot, add asafoetida, cumin, fennel, cinnamon, cardamom and fry for a few seconds. Then add onion and fry it well. When the onion becomes light brown, add garlic, ginger and green chillies and cook it. Now put curd spices in the pan and run well. It will cook in 3-4 minutes.
Now add roasted turmeric and peas to it. Add salt as per the taste and cover the vegetable and let it cook on low flame for 10 minutes. Finally add green coriander and decorate it and serve with hot bread or paratha.
