Saman rice, also known as Samak or Varai, is one of the major grains eaten in fasting. It does not contain gluten and it is easily digested. Edli made from it is soft, tasty and quite light. Let’s know its easy recipe and special peanut chutney made to enhance taste.
Ingredients
Saman rice-2 cups (soaked 3-4 hours)
Sago-½ cup (soaked 3-4 hours)
Curd – 1 cup (better sour sour)
Light lukewarm water – as required
Kadhi leaves-6-8 leaves (finely chopped)
Rock salt or black salt – as per taste
Fruit Salt (ENO) – 1 teaspoon
Ghee – to grease idli mold

Method
-First of all, grind the rice and sago of Saman in a coarsely in the grinder.
-Add curd to it and if needed, mix a little lukewarm water and prepare an idli -like solution.
Now cover this solution for 15-20 minutes.
Then add curry leaves, rock salt and fruit salt and mix well.
-Grease the melted mold with ghee and add solution to it.
-Heat the water in the prasher cooker or idli cooker and steam it for 12-15 minutes by keeping molds in it.
-Check by adding toothpick or knife, if it comes out, idli is ready
Roasted Peanut – ½ cup
Green Chilli – 1
Ginger – ½ inch piece
Curd – 2 teaspoons
Rock salt – as per taste
Method:
Grind everything in a grinder together. If needed, prepare the sauce by mixing some water.
