In this way, make the paratha of the Sattu –
For flour:
2 cup wheat flour
Taste salt
Water as per need
1 teaspoon oil or ghee
1 cup sattu
1 finely chopped onion
2 garlic buds (grated)
1 inch ginger (grated)
2 green chillies (finely chopped)
2 teaspoon green coriander
½ teaspoon celery
½ teaspoon fennel (optional)
½ teaspoon cumin, ½ teaspoon fennel
1 teaspoon mustard oil
½ teaspoon red chili powder, ½ teaspoon garam masala
1 teaspoon lemon juice
Taste salt
A little water as needed
To fry:
Ghee
Knead the dough:
Put salt in wheat flour and knead soft dough with water. Apply a little ghee and mash it again and cover and keep it for 20-30 minutes.
Take sattu in a vessel. Add onion, garlic, ginger, green chillies, green coriander, all spices and mustard oil. Add lemon juice and sprinkle some water as needed so that the mixture becomes light moist but does not look wet.
Fill and roll the paratha:
Make a small puri by making dough dough. Keep a mixture of 2-3 teaspoons of sattu in the middle and make round bundles by turning the edge. Make a paratha slowly and prepare the paratha.
Put a paratha on the hot griddle and bake ghee or oil on both sides till golden brown and crisp.
Method of serving:
Eat this hot-hot Sattu paratha with curd, pickle or coriander-utensil chutney. If you want, you can also serve brinjal or buttermilk.
