Material:

  • Radish – 500 grams
  • Green chillies – 4-5 (cut lengthwise)
  • Mustard oil – 1 cup
  • salt to taste
  • Red chilli powder – 2 teaspoons
  • Turmeric powder – 1 teaspoon
  • Mustard seeds – 2 teaspoons (crushed)
  • Fennel – 1 teaspoon (crushed)
  • Fenugreek seeds – 1 teaspoon (crushed)
  • Asafoetida – 1 pinch

Method of preparation:

  1. First of all, wash, peel the radish and cut it into long thin strips. Then spread them on a clean cloth and dry them lightly in the sun for 3-4 hours.
  2. Prepare the masala by mixing red chili powder, turmeric, mustard, fennel, fenugreek seeds, salt and asafoetida in a bowl.
  3. Heat mustard oil in a pan until light smoke arises from it. Let the oil cool down a bit.
  4. Now add spices to cold oil and mix well. After this, add radish and green chillies and mix everything gently so that the spices get coated well on all the pieces.
  5. Fill the prepared pickle in a clean glass jar and keep it in sunlight for 2-3 days. With this, the spices get absorbed well into the radish and the taste of the pickle increases.

  • To keep the pickle fresh for a long time, always use a dry spoon.
  • If you like spicy then you can increase the quantity of green chillies.
