Essential Material:
Kuttu flour – 1 cup
Desi Ghee – 4 tablespoons
Water – 2 cups
Jaggery
Cardamom Powder – 1/2 teaspoon
Sliced fruits (almonds, cashews, raisins) – 2 tablespoons
Coconut (optional – Finely grated) – 1 tbsp
First, put 2 cups of water in a pan to heat it and add grated jaggery to it. Allow the jaggery to dissolve in water and boil until it melts completely. Sieve this jaggery water once so that if there is any dirt, it will leave. Now keep it separate.
Now add hot jaggery water to this roasted dough. Keep in mind that during this step, the heat is slow and you should be cautious because they can splash fast as soon as they add water to the flour. Now keep stirring continuously with a spoon of wood so that the knots do not fall. In a while, this mixture will start to thicken and become a texture like halwa.
Now your hot and delicious kuttu flour pudding is ready. Serve it hot. This pudding is a perfect and energetic dish to eat especially during fast, Navratri or any fast.
