Ingredients for Aloo Kofta Curry to create koftas
½ cup cheese (grated)
½ cup processed cheese (grated)
Taste salt
½ tsp coriander powder
½ tsp chaat masala (also to sprinkle a little bit)
4 teaspoons cardamom powder
4 tablespoons green coriander (chopped)
2–3 tablespoons cornflor
Oil (to fry)
To make gravy:
½ inch cinnamon piece
1 bay leaf
½ tsp cumin seeds
3 medium onions (chopped)
10–12 cashews
2 large tomatoes (chopped)
2 green chillies (chopped)
½ inch ginger (chopped)
5-6 garlic buds
½ tsp red chili powder
½ tsp coriander powder
Pompous powder
½ tsp Kasuri Methi Powder
½ tsp garam masala
2 teaspoons fresh cream
Green coriander and cream for decoration

1. Add potatoes, cheese, processed cheese, salt, coriander powder, chaat masala, cardamom powder and green coriander in a large bowl and mix well.
2. Prepare a soft mixture by adding cornflour to it.
3. Make small balls by applying some oil on your hands and wrap it in cornflour.
4. Deep fry these balls in hot oil until golden and crispy.
5. Take them out on the absorbent paper and keep them separate.
1. Heat oil in a deep pan. Add cinnamon, bay leaves and cumin seeds and fry till the fragrance comes.
2. Now add onion and fry it till it becomes golden.
3. Add cashews, tomatoes, green chillies, ginger and garlic, add 1 cup of water and cover and cook for 5 minutes.
4. Cold the mixture and put it in a mixer and make a smooth paste.
5. Add some oil in the same pan and fry red chili powder, coriander powder and turmeric in it.
6. Now add ground paste and cook for 5–7 minutes.
7. Add some water to it and adjust the consistance of gravy and add kasuri methi and garam masala.
8. Finally add fresh cream and mix well.
9. Remove the gravy in a serving bowl and keep the fried koftas on top. Garnish by adding some cream and green coriander over it.
