-2 boiled potatoes, mashed well

-1 finely chopped green chillies

-1/4 cup grated carrots
-2 teaspoon chopped green coriander
-Salt
-The oil or ghee to make

2. Now add salt as per taste and mix all the mixture well. Keep in mind that vegetables and potatoes are mixed well in each other.

3. Now heat a non-stick griddle or pan on gas. Brush a little oil.

4. Take a bitter batter and pour it on the pan and slowly spread it in round shape. Do not dilute it too much, keep it light thick so that the uttapam becomes soft from inside and light crisp from outside.

5. Now spread a mixture of potatoes and vegetables over this batter. Press with light hands so that it sticks well.

6. Add some oil or ghee all around and cook on low flame. When the lower part becomes golden, then turn over and bake on the other side.

7. After baking well from both sides, the heat-hot uttapam is ready.
