Arabic leaf pakoras material
Arabic Fresh leaves – 8 to 10 (large size)
Besan – 1 cup
Rice flour – 2 tablespoons (for crispness)
Asafoetida – 1 pinch
Turmeric – ½ tsp
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Fennel powder – ½ tsp (optional)
Tamarind pulp – 1 tbsp (or to taste)
Salt – as per taste
Water – as per requirement
Oil – to fry

To make pakoras of Arabic leaves, first wash the Arabic leaves with clean water and dry it. Take out the thick vein lightly with a knife so that the leaves can turn well. After this, add gram flour, rice flour, turmeric, chili powder, asafetida, coriander powder, fennel powder and salt in a bowl. Add tamarind pulp to it and prepare a thick paste by mixing some water (like pakoras, not flowing).

Now you spread an Arabic leaf, apply gram flour solution on it. Now place another leaf on it and dissolve again. Put 3-4 such leaves on top of one and roll it. Roll the prepared roll tight and press both edges. Similarly, make rolls of other leaves. Cook these rolls in steam for 15-20 minutes (in idli cooker or lid vessel). After cooling, cut them into round pieces. After cutting, heat the oil in the pan and now fry these pieces on low flame till it becomes golden and crisp.
