Materials required to make sand

To knead dough:
Flour – 2.5 cups (about 350 grams)
Salt – 1 pinch
Baking powder – 1 teaspoon
Ghee – ½ cup (100 grams)
Water – less than ½ cup
Frying oil or ghee
Dry dry fruits for garnishing

For syrup:
Water – 1 cup
Sugar – 2 cups (400 grams)
Cardamom Powder-2-3
Saffron – Some threads
Food color – as per wish

(If you want to make half the quantity, then make half the fresh, ghee, sugar and the rest of the ingredients.)

Method of making syrup-
-First, put water and sugar in a pan and keep it on the gas. Now add light food color, saffron and crushed cardamom to it. Cook this mixture until it becomes sticky and a light wire starts to form when pulled between the fingers. Sugar syrup has to be kept lukewarm, not too cold or too hot.

Method of kneading dough-
Add flour, salt and baking powder to a large pot. Now add ghee to it and mix well with hands. Slowly add water and knead the dough with light hands. It does not have to be tightened at all. Cover the dough for 15-20 minutes so that it is set.

Method of preparing sand
After the dough is ready, make small dough. Give each dough round and make a light hole in the middle. Now heat oil or ghee in a pan. Keep in mind, the oil should not be too hot. Fry the sand on low flame until golden and crisp. By frying on high heat, it will burn from outside and remain raw from inside. Immediately put the fried balushahi in lukewarm syrup. Dip them in sugar syrup for about 5-6 minutes so that the sweetness goes to the inside.

How to serve-
When the sand is wet in the sugar syrup, take them out in a plate. Sprinkle chopped pistachios or almonds from above and if you want, you can also apply silver work. Take, your perfect confectionery sand is ready.

Special tips-
-Ta should not be very strict or too wet.
-Always fry the babyashi on low flame.
-The light should be lukewarm, otherwise the sand will either become more strict or break.
