After this, wash the karels with water, this makes them taste further. Now comes the turn of stuffing.

For this, heat two tablespoons of oil in a pan. Add finely chopped onion to it and fry till it becomes golden. After this, add ginger-garlic paste and fry for some time. Then add turmeric powder, coriander powder, red chili powder, mango powder and fennel powder. If the fragrances of spices start coming, then add roasted gram flour and salt as per taste. After frying well, this mixture will become thick and delicious. This stuff will determine the taste of Karels.

Now fill this prepared spices inside every bitter gourd carefully, so that the masala does not come out while frying, tie the karels lightly with thread. Then heat the oil in a deep pan and put the stuffed karils in it. Cover them on low heat and cook for about 15-20 minutes. Keep turning the bells in between, so that they become golden and soft from all sides. When the bitter gourd is well roasted, turn off the gas. Now the plate of stuffed karels is ready.
