Ingredients (for 2-3 people):

Main material:

  • Okra (small chopped): 300 grams

  • Onion: 3 large (in 2 thin slices, 1 finely chopped)

  • Tomatoes: 2 medium (finely chopped)

  • Green Chilli: 2 (cut in length)

  • Ginger-garlic paste: 1 tbsp

  • Yogurt: 2 tablespoons (folded)

Spices:

  • Turmeric Powder: ½ tsp

  • Coriander powder: 1 tsp

  • Red chili powder: ½ tsp (or by taste)

  • Garam Masala: ½ tsp

  • Amchur powder or lemon juice: ½ tsp

  • salt to taste

  • Oil: 3-4 tablespoons

Method:

  1. Preparation of okra:

  • Wash the lady finger thoroughly and dry it with a cloth.

  • Cut it into 1-1.5 inch pieces.

  • Heat a little oil in a pan, and fry the lady finger on medium flame till it becomes light crisp (about 8-10 minutes). Take it out separately.

  • Onion in two ways:

    • Finely chop a onion and cut two onions into slices (thin flat slices).

  • Spicy Gravy Creating:

    • Put some more oil in the same pan.

    • Add the first slices onion and fry until golden. Take out separate (garnish or to put later).

    • Now add finely chopped onion, and fry until it becomes pink.

    • Add ginger-garlic paste and fry for 1 minute.

    • Add chopped tomatoes and cook until the oil starts leaving.

    • Now add all dry spices (turmeric, coriander, red chili) and salt.

    • Fry for 1-2 minutes, then add watched curd and fry while stirring as soon as possible.

  • Mixing okra and onion:

    • Now add the roasted ladyfing and onions with already roasted slices.

    • Mix well

    • Cook on low heat for 5 minutes, so that all the spices get absorbed in the ladyfinger.

    • Add garam masala and mango.

    • Mix well and cover and keep it for 2 minutes.

    • Turn off the gas.

    Method of serving:

    Serve it with hot parathas, phalke or cumin rice. Add a little green coriander over it.
