Belsand Special Mithai Chhena Jalebi: This special chhena jalebi found in Belsand of Sitamarhi has now become the identity of the district. This dessert of moonlight sweets is not just a dish, it has become a local identity, due to which people from far and wide are drawn and the round-chanta of Jalebi’s syrup are the subject of discussion in the entire area.
This jalebi is prepared from a mixture of chenna and fine flour. Chhena has also been used in this recipe. The mixture of chisel and flour is cooked in ghee in a light pan and drown in syrup. These jalebis are given as special gifts to guests in local homes.
Chhena jalebi is especially fried in pure ghee. In the olden days, confectionery used to enhance its unique taste by serving it in an earthen pot. Then 15–16 jalebis used to be up to 1 kg and the sweetness was also available. Although nowadays these places are fryed in refined oil, but the efforts of shopkeepers are to maintain purity.
