Coconut kheer recipe

Material:

  • Fresh coconut (grated) – 1 cup
  • Milk – 1 liter
  • Sugar – 1/2 cup (as per taste)
  • Rice – 2 tablespoons (soaked)
  • Cardamom powder – 1/2 tsp
  • Cashew, almonds, pistachios-2-3 tablespoons (chopped)
  • Ghee – 1 tsp (to fry dry fruits)

Method:

  1. Rice cooking:
    – Add soaked rice in milk and cook on low flame until the rice becomes soft.
  2. Coconut mix:
    -When the rice is cooked, add grated coconut to it and cook on low flame for 10-15 minutes.
  3. Pour sugar and cardamom:
    Now add sugar and cardamom powder to it. Cook till the sugar dissolves.
  4. Fry dry fruits:
    -Heat ghee in a small pan and fry cashew nuts in it till it becomes light golden.
  5. Mixing in kheer:
    -Insert roasted dry fruits in kheer and cook for 2-3 minutes.
  6. To serve:
    – Coconut pudding can be served both hot or cold.
