Coconut pudding is a delicious dessert with fresh coconut, milk, rice, sugar, cardamom and dry fruits and made on special occasions, can serve it hot or cold.

Coconut kheer recipe
Material:
- Fresh coconut (grated) – 1 cup
- Milk – 1 liter
- Sugar – 1/2 cup (as per taste)
- Rice – 2 tablespoons (soaked)
- Cardamom powder – 1/2 tsp
- Cashew, almonds, pistachios-2-3 tablespoons (chopped)
- Ghee – 1 tsp (to fry dry fruits)
Method:
- Rice cooking:
– Add soaked rice in milk and cook on low flame until the rice becomes soft. - Coconut mix:
-When the rice is cooked, add grated coconut to it and cook on low flame for 10-15 minutes. - Pour sugar and cardamom:
Now add sugar and cardamom powder to it. Cook till the sugar dissolves. - Fry dry fruits:
-Heat ghee in a small pan and fry cashew nuts in it till it becomes light golden. - Mixing in kheer:
-Insert roasted dry fruits in kheer and cook for 2-3 minutes. - To serve:
– Coconut pudding can be served both hot or cold.
