Material-
Urad Dal – 2 cups
Curd – 1 cup (swept)
Green chutney – 2 tablespoons
Tamarind Chutney – 2 tablespoons
Roasted cumin powder – 1/2 tsp
Red chili powder – 1/2 tsp
Chaat Masala – 1/2 tsp
Black salt – as per taste
Salt – as per taste
Oil – to fry
Water – as required
Step 1: Soaking and grinding urad dal
First of all wash urad dal thoroughly and soak it for overnight. The next day grind it finely with very little water. Remove the lentil paste in a vessel and beat it well so that the mixture becomes light and bloated. This step helps to make the vadas soft and bloated.
Heat oil in a pan. Wet your hand and make a round shaped vada with a little batter. Carefully leave it in hot oil. Once the vada is slightly roasted, then reduce the heat and fry till it turns golden brown. Fry all the vadas in this way.
Step 3: Soaking the vands in water
Soak the fried vadas in a vessel lightly in lukewarm water for 15 to 20 minutes. Then remove the vadas from the water and press it lightly with the hand so that the excess water comes out. With this step, the vadas become soft and absorb yogurt well.
Now take the yogurt swept in a bowl and add salt as per taste. Keep the vadas in a serving plate and add curd on top so that the vadas are completely covered. Then add green chutney and tamarind chutney.
Step 5: Sprinkle and serve spices
Now sprinkle roasted cumin powder, red chili powder, chaat masala and black salt from above. If you want, you can also add a little green coriander and pomegranate seeds. Your cold, spicy and delicious yogurt vada is ready.
