A confluence of taste and desiity in the ax
Dahi Vada is served in a plastic plate in most places, but this shop of Ujwal Gupta serves it in a kulhar in a very desi style. The aroma of the clay of the ax makes the taste of the curd vade more special. Customers say that this curd vada found in Kulhar gives a very different and wonderful taste, which is not found even in a big hotel.
The shop owner Ujwal Gupta says that the process of making this curd vade is not easy. Urad and moong dal are soaked for about 8 hours. Then it is grinded and made round vadas, which are fried till they become golden. After this, these vanders are immersed in asafoetida water, which makes their taste more enhanced.
After this, special creamy and thick yogurt is prepared, in which the vanders are soaked. Sweet sauce is added from above. Salt, red chili, green coriander and Ujwal’s special spice converts this dish into a very ‘amazing taste’.
Despite so much hard work and taste, the cost of this curd vade is only 25 rupees. This is the reason that people of every age and every class gather here every day. The shop opens from 4 pm to 10 pm and the long line of people starts as soon as the evening falls.
Local people say that Chitrakoot is not only the center of religious journey, but now it has become a destination of taste journey. This small shop of Ujwal Gupta may be ordinary in appearance, but its axed curd is making Vada Vada Chitrakoot special on the taste map.
