Although most people buy sweets from the market on Diwali, there are some sweets which are prepared from vegetables. You can make it at home for your family. In such a situation, you can do all the work and prepare vegetable sweets at night.

One advantage of vegetable sweets is that it also provides some nutrition. If you prepare it at home, hygiene can be maintained as per your health. You can also decide the amount of sugar in sweets yourself.

Among the sweets made from vegetables, sweets made from parwal and khoya are very much liked, apart from this, bottle gourd barfi also tastes very good. The famous Petha of Agra is also prepared from white pumpkin. At present, for Diwali, you can make parwal and gourd sweets at home, because these do not take much time.

To make Parwal sweets, you will need Parwal (vegetable), milk khoya (you can also buy khoya from the market), pistachios, cashews, almonds, raisins. Green cardamom, sugar (for making syrup).

First of all, wash and peel the parwal and make a cut in the middle to remove the seeds and make it hollow. Now keep the Parwal boiling in water and after about 70 percent cooking, turn off the gas and take out the Parwal in a strainer so that the water drains out.

Put water and sugar in equal quantity on the gas and let the syrup prepare. Also add cardamom powder and a little green color to it. After making the syrup, add parwal in it and cook for some time and after turning off the gas, let the parwal remain immersed in the syrup for four-five hours.

Prepare the filling by mixing chopped dry fruits in the khoya and take out the parwal from the syrup and fill the khoya in it one by one. After this, your parwal sweet is ready to serve after garnishing it with pistachios.

To make bottle gourd barfi, take the most important ingredients bottle gourd and khoya. Along with this, cardamom powder, cashew nuts, almonds, melon seeds, sugar (for syrup) will be required.

First of all, wash and grate the bottle gourd, add ghee in the pan and keep it to cook on low flame, keep stirring it in between so that the bottle gourd does not burn. On the other hand, add khoya to the pan and fry it on low flame while stirring continuously till it turns golden in color.

After both the things are ready, keep them aside. Make two strings of syrup as per requirement in a pan. Add cardamom powder in it. When the syrup is ready, turn off the gas and mix bottle gourd, khoya and dry fruits in it and spread it on a plate greased with ghee. After some time, when the barfi gets set, cut it into square pieces and garnish with one cashew each and serve.
