The combination of sago, potatoes and desi spices makes it special. This instant dish is not only delicious but also keeps stomach full for a long time during the fast.

To make sago khichdi it is necessary that all the ingredients are already nearby. You need 1 cup of sago, 1 boiled potato (chopped), 2 green chillies (finely chopped), 2 tablespoons peanuts, 2 tablespoons cashew nuts, 1 tablespoon curry leaves, 1 tsp cumin, 1 tablespoon ghee, rock salt, 1 tablespoon salt, 1 tablespoon of lemon juice and a little green coriander.

First of all, wash the sago thoroughly so that all the starch comes out. After this, soak it in water for 4 to 5 hours. The amount of water should be so much that sago is not soaked, not submerged. While making khichdi, sago will be very soft and different grain.

Heat 1 tablespoon ghee in a pan. As soon as the ghee is hot, add cumin seeds and as soon as it starts crackling, add finely chopped green chillies and curry leaves. With this tempering, the indigenous taste and fragrance in the khichdi fills.

Now first add cashews and peanuts to it and fry till it becomes light golden. Then cut boiled potatoes into small pieces and take it lightly so that it also tastes well.

Add soaked sago in the early morning and add rock salt as per taste. Now mix all these slowly so that sago grains do not break and mix well in the spices.

Now cover the pan and let the khichdi cook on low flame for 5 to 7 minutes. Stir a light hand in the middle so that the khichdi does not look down. When the sago becomes completely soft and starts glowing lightly, then the khichdi is ready.

After turning off the gas, add 1 tablespoons of lemon juice and chopped coriander. This causes freshness and mild sourness to the khichdi, which makes the taste even more special. Now serve hot khichdi and get energy along with taste in fast.
