About 60 years ago, it was born at the sweet shop of Moolchand Castia near Jain Market located in the inner market of Pali. At that time only rabri used to be made there. At the same time, Gulab Puri, who worked, started cooking on low flame by adding remaining milk to the remaining milk. Gradually, that milk turned into mawa and its color became maroon. When it was tasted after cooling it, the taste was different. This taste has become the identity of Pali today and its sweetness has spread to the country and abroad.
First of all, boil 1 kg full cream milk on high heat. When it comes to a boil, reduce the gas and add 10-12 rose leaves and 8-10 saffron threads. Keep stirring the milk continuously so that it does not look down. When the milk remains half, dissolve 1 lemon juice in 2 teaspoons of water and add it slowly. This will make milk in the milk which make the halwa special. Now let the milk become a little more thick and then add 200 grams of sugar to it.
As the milk becomes more thick, add 2 teaspoons of ghee to it and keep stirring continuously. Do this until the consistance like halwa comes. During this time its color will also start changing. Now add 4-5 green cardamom to it and remove the mixture in a ghee plate and keep it for one to one and a half hours to cool. When cooled, serve it by cutting it in the desired shape.
