Mau News: Rajesh Yadav, the owner of Rajesh Sweets of Ranipur, says that Khurma is made in a different way, whose demand lives not only in Mau and Uttar Pradesh but also in Dubai.
Mau: Mau district of Uttar Pradesh is not only known for its historical and religious importance, but the sweets here also have a special identity in the whole of Purvanchal. The most popular among them is Khurma, whose taste and crisp people like it very much. Khurma is definitely served from marriage to festivals and its demand also lives in cities outside Mau.
How is Khurma?
Material: 1 kg flour, 3-4 tablespoons ghee or oil (for moyan), 1 kg sugar, cardamom powder, and oil or ghee for frying.
Method:
- Sieve the flour and add ghee to it and mix it well.
- Add a little water and knead hard dough and keep it covered for 15-20 minutes.
- Make roti dough and roll the roti and then cut the small square with a knife.
- Fry these pieces in oil/ghee on medium flame till they become golden and crisp.
- Make sugar syrup by adding sugar and some water to a separate vessel.
- Pour the fried pieces into the syrup, so that every piece of layer gets up.
- After cooling, Khurma is sweet and crisp.
