The local 18 team talked to the famous confectionery lawyer of Bharatpur about the recipe and process of making this special dessert. Advocate Halwai said that Kalakand requires time and patience in making, but people like its taste so much that they repeatedly demand this sweets. To make it, pure and fresh milk is first taken. Then it is boiled while stirring continuously on low flame in a large pan. This process lasts for 3 to 4 hours and during this time the milk thickens and takes the form of mawa.
After the mawa is formed, the appropriate amount of sugar and cardamom powder is added to it. Cardamom adds a unique combination of aroma and taste to its sweetness. After this, this mixture is spread well in a steel tray and kept for about 12 hours to freeze. When it takes a solid form, it is cut into small pieces and sent for sale.
