To make Kundru curry, you need 500 grams of Kundru, 2 tomatoes, 1 tablespoon peanuts, 3 tablespoons mustard oil, 2 bay leaves, 1 teaspoon cumin, 1 teaspoon mustard and 1 teaspoon gram flour. Apart from this, red chilli powder, turmeric powder, vegetable masala, salt, garam masala and 2 green chillies will also be added as per taste.

First of all, wash the Kundru thoroughly with water and cut it into small pieces. After this, put tomatoes and peanuts in the mixer and make a paste. This masala will prepare the base of the vegetable and will further enhance the taste of Kundru.

Heat mustard oil in a pan. Add turmeric and red chilli powder to the chopped Kundru and fry on medium flame for 3-4 minutes till it becomes soft. Then take it out in a plate and prepare to fry the spices in the same oil.

Add bay leaves, cumin seeds and mustard seeds and fry in the remaining oil. Then add gram flour and cook till it turns golden. After this add red chilli, turmeric, vegetable masala and coriander powder and mix well. Now add tomato paste and some water and cook the masala until it thickens.

Now add fried kundru, green chillies and garam masala and mix well. Add salt as per taste. After this, add one cup of water and cover the pan. Cook on medium flame for four-five minutes and keep stirring occasionally so that the vegetables do not burn at the bottom.

After the vegetables are cooked, garnish with chopped coriander. Your spicy Kundru curry is ready. Serve it with hot roti, paratha or puri and enjoy a delicious meal with the family.
