Jaggery kheer is a dish that is not only delicious but also beneficial for health. The natural sweetness of jaggery and the combination of milk and rice makes this kheer even more special.

To make jaggery pudding, first collect the necessary ingredients. For this you need-one liter full cream milk, half a cup of basmati rice, one cup chopped jaggery, two teaspoons of ghee, one teaspoon of cardamom powder, and almond-kaju-pista to decorate on top. If you want, you can also add raisins.

First wash the rice thoroughly and soak it in water for half an hour. After this, boil milk in a heavy bottom vessel and add soaked rice to it and let it cook on low flame. Keep in mind that keep running in between so that the milk does not stick to the bottom. When the rice soft and starts dissolving well in milk, then a thick base of kheer is ready.

Now put a little water in a separate pan and melt the pieces of chopped jaggery in it. Keep in mind that do not put jaggery directly in hot milk, otherwise the milk may burst. When the jaggery syrup is ready, then after cooling it, mix it with milk and rice pudding and stir it well.

Now add cardamom powder to the kheer and add light fried dry fruits to the top and mix it with the top. This increases the taste of kheer double. If you want, you can also add a little saffron, which enhances both the color and smell of kheer.

You can serve jaggery pudding in both cold or hot way. Serving in beautiful bowls or ax will make the guests feel special. Garnish by adding chopped dry fruits on top and decorate with a little rose petals.
