Rae Bareli: It is a rainy season, the fun of eating crisp pakoras with tea is different. People often eat potatoes, onions or cabbage pakoras, but pakoras made from Arabic leaves are special in both taste and health. Vandana Sharma, a home science spokesperson of JIC College, Rae Bareli, told Local 18 about this special recipe. He says that Arabic leaves are excellent in taste as well as rich in iron, calcium and fiber, which are beneficial for the body.
To make pakoras of Arabic leaves, you will need large fresh leaves of Arabic, gram flour, turmeric powder, red chili powder, coriander powder, celery, salt, green chilli and ginger paste, green coriander and oil to fry. Vandana Sharma says that rice flour gives crisp to pakoras, while turmeric and spices improve taste.
First of all, wash the Arabic leaves thoroughly and cut their stalks and dry it with a cotton cloth. After this, add gram flour, rice flour, turmeric powder, red chili powder, coriander powder, celery, salt and green chilli-ginger paste and mix well. Prepare a thick batter by adding some water to it. Keep in mind that the solution is not thin. Now apply this gram flour solution on Arabic leaves one by one. If you want, you can make rolls by adding three to four leaves and then cut into pieces. Heat the oil in the pan and fry these leaves in oil with light hand and fry it on medium flame till it becomes golden and crisp.
