Kadima Ke Patte Ki Sabzi: Kadima leaf fish style vegetable is popular in Mithilanchal. Which is made with yellow mustard, ginger, garlic and spices. It is served with roti or rice.
This material is needed to make vegetables
250 grams of kadima leaf, 1 large onion finely chopped, 2 green chillies finely chopped. 100gm yellow mustard paste, 1 inch ginger finely chopped, 2-3 garlic buds finely chopped, 1 tbsp mustard oil, 1/2 teaspoon cumin, 1/2 teaspoon turmeric powder, 1/2 teaspoon red chili powder, 1/2 teaspoon garam masala, 1/2 spoon powder, 1/2 spoonful Juice, 1 tbsp kasuri fenugreek (optional), to decorate fresh coriander leaves.
Prepare kadima leaves. Wash the kadima leaves thoroughly and let them dry. Finely chop the leaves and keep it aside. Prepare the masala. Make a paste by adding ginger, garlic and green chillies, yellow mustard to a mixer grinder. Heat mustard oil in a pan. Add cumin seeds and let it crackle. Add finely chopped onion and fry until golden brown. Add ginger-garlic-green chili paste and mix well. Add turmeric powder, red chili powder, coriander powder and garam masala and mix the spices well. Add chopped kadima leaves and let it cook on low flame for 10-15 minutes. Keep stirring in between, so that the vegetable is not burnt. Add salt and lemon juice and mix well. If you want, you can also add kasuri fenugreek. Let it cook for 5-7 minutes and until the vegetable cooks well. Serve hot vegetables with fresh coriander leaves.
