600 to 700 grams including mutton bone

Curd (thrust) -½ cups

Mustard oil or ghee-150 ml

Cinnamon-4–5

Kashmiri red chili powder-2 teaspoon

Saunth (dry ginger powder)

Fennel powder-1 teaspoon

-Buy fresh mutton before the first, this will enhance the taste of food. Clean the mutton thoroughly in water two to three times. Now put mutton in a bowl. Add curd and a little salt to it and mix it for half an hour and leave it. This will make the meat of mutton a little soft. Now put oil in a cooker or pan and heat it.

– Add all whole spices like cardamom, black pepper, asafetida, cinnamon and fry lightly. Now add ginger and garlic paste to it. Fry it for two to three minutes too. Now add marinated mutton to it. Cook it while stirring. Keep the heat high. Now add dry ginger, fennel, Kashmiri red chili, salt and mix. Fry it for five more minutes.

Now reduce the heat and whisk the curd in it. This will not burst the curd. Keep running Now add a cup of water to the mutton and boil it. Light heat and cover and let it cook for about 30 to 45 minutes. Keep stirring the mutton in the middle. Check whether the mutton meat is completely cooked or not.

-When the gravy thickens and leaves the oil-spice vessel, do not cling to the gas. Put it in the serving bowl. Add coriander leaves and kasoori fenugreek and cover it, so that their flavor also dissolves in the mutton.
