- Boneless chicken – 1 kg (cut into medium pieces)
- Green garlic leaves – 2 stocks, finely chopped
- Garlic – 7 to 8 cloves, chopped
- Ginger – 1 tbsp, chopped
- Green chillies – 2 to 3, finely chopped
- Coriander powder – 1 tablespoon
- Red chilli powder – 1 tbsp
- Red chilli paste – 1 tbsp
- Cumin powder – 1 tablespoon
- Chili flakes – 1 tsp
- Lemon juice – 1 to 2 tbsp
- Green Coriander – 1 cup (for garnish)
- Salt – as per taste

- Mustard oil – 3 tbsp
- Fenugreek seeds – 1 tsp
- Turmeric powder – 1 tsp
How to make Nepalese Chicken Choila
- 1. Wash the chicken pieces and cut them into medium size.
- 2. Apply light oil on a grill or non-stick pan and cook the chicken until it turns golden on both sides. The chicken will be cooked in about 20-25 minutes.
- 3. Take out the chicken in a bowl and add ginger, garlic, green chilli, coriander powder, cumin powder, red chilli powder, chilli flakes, red chilli paste, lemon juice and salt.
- 4. Mix all the ingredients well so that the spices dissolve in every piece of chicken.
- 5. Now prepare the tadka – heat mustard oil, add fenugreek seeds in it. When it turns brown, add turmeric and immediately turn off the gas.
- 6. Pour this tadka on hot chicken and mix well.
- 7. Keep it covered for 10 minutes so that the flavor gets set properly.
- 8. Garnish with green coriander on top and serve it with beaten rice or roti.
Tips and Tricks
If you want, you can add smokey flavor to it by giving it coal smoke. Mustard oil is the main flavor of this dish, do not replace it with any other oil. If you want more spicy taste then you can increase the quantity of chilli powder.
