Fresh spinach leaves-10-12 (clean and dried)
Besan – 1 cup
Rice flour – 2 tablespoons (for more crispness)
Celery – ½ tsp
Turmeric – 4 teaspoons
Red chili powder – ½ tsp (as per taste)
Coriander powder – 1 tsp
Salt – as per taste
Water – as per requirement (to make thick solution)
Oil – for deep fry

To make spinach pakoras, first wash the spinach leaves thoroughly and wipe it with a clean cloth and remove it if there is a thick stalk. After this, add gram flour, rice flour, celery, turmeric, red chilli, coriander powder and salt in a vessel. Prepare a thick solution by slowly adding water. The solution should be so much that the leaves are wrapped in it well.

Prepare like this
Heat oil in a pan. Now immerse every spinach leaf in a gram flour solution and put it in hot oil carefully. Keep frying till it turns golden on medium flame. Remove on the tissue paper so that the extra oil present in the pakodo is removed. Serve with green chutney or tamarind sweet chutney.
