Material for making pav-baji
- 3-4 medium potatoes
- 2 carrots
- 1/2 beetroot
- 4 tomatoes
- 1 onion
- 7-8 garlic buds
- 1 capsicum
- 1/2 cup tomato puree
- 1 teaspoon Kashmiri Chilli Powder
- 2 tablespoons pav-baji masala
- Taste salt
- 2 tablespoons butter (for bhaji)
- 2 tablespoons butter (for pav)
- 2 tablespoons oil

Preparation of vegetables
First of all, peel the potatoes, carrots and beetroot and cut it into large pieces. Cut the tomatoes thick as well. Now put all these vegetables in a pressure cooker. Also add 7-8 garlic buds and 1 teaspoon salt. It does not take too much time to cook the vegetables, for this, put 1-2 cups of water in the cooker and close the lid and cook till 4-5 whistles. In this way, vegetables will boil quickly and well and you will also be easy to mash later.

As long as the vegetables are cooking, offer a pan on the gas. Add 2 tablespoons of oil and 2 tablespoons butter to it. As soon as the butter melts, add finely chopped onion and fry it till it turns golden brown. Now add chopped capsicum and cook for 2 minutes. After this, add Kashmiri red chili powder, pav-khaji masala and tomato puree. Fry it well for 2-3 minutes so that the raw flavor of spices is over and smells in them.

Now take out the pressure from the cooker and open the lid. Mash boiled vegetables well with a masher. Try to become like a smooth paste. Then put them in the spices pan. Mix well and add salt as per taste. Now cook it on low flame for 3-4 minutes so that the flavor of vegetables and spices is found very well.

When the bhaji is ready, add a piece of butter on top and sprinkle green coriander. Garnish by adding fine pieces of onion and lemon juice. On the other hand, cut the pav from the middle and apply butter in it and bake it lightly on the pan. Now serve the hot-hot pav with Bhaji. Believe it, its taste will look exactly like a restaurant and it will not take time to make it.
