Sabudana Khichdi Recipe: Sago Khichdi is the most popular and healthy option of fast. Often people complain that khichdi becomes sticky but by adopting the right method, they can make it like beads. Sago is the most important step soaking, soaking water quantity and low flame. With this easy recipe, khichdi becomes tasty, energy giving and mild in digestion.

- 1 cup sago
- 1 tbsp ghee
- 1/4 cup peanuts
- 1 green chili finely chopped
- Rock salt as per taste
- 1/2 lemon juice
- To decorate green coriander
- 1 small potato boiled and chopped into small pieces (optional)

The correct method of making sago khichdi
First of all, wash the sago in water 2-3 times so that all the starch comes out of it. Now put sago in a deep vessel and add so much water that it just wet, do not swim above the water. Keeping the amount of water correct is the most important step because the grains will stick on pouring more water and will be strict by adding less water. Cover it and keep it for 4-5 hours or overnight. When you press the grain by hand and it is easily suppressed, then the sago is soaked.
Now put ghee in a pan and heat it. Add peanuts and bake on low flame till it turns golden brown. Keep the peanuts separately. This increases crispness and test in khichdi.
3. Prepare potatoes and spices
Now add boiled chopped potatoes in the same ghee and bake it lightly. Add green chillies and stir for 1 minute. This will increase the flavor and a good test will come in ghee.

4. Add sago and cook
Now filter the soaked sago and add it. Keep stirring on low flame so that the rash does not stick. Keep in mind that do not cook it too much, otherwise the grains will be sticky. Cook for about 3-4 minutes until the rash looks transparent.
Add rock salt, add peanuts back and mix lightly. Finally, add lemon juice and green coriander and turn off the gas.
Perfect feeding khichdi tips
- Always soak sago in the right amount of water. If you add more water, the khichdi will stick.
- Use steel or non-stick pan so that the rash does not stick.
- Do not run too much after adding sago and do not cook too much. To cook only 3-4 minutes on light flame.
- Use ghee, this makes the khichdi even more tasty.
