This difference is not only limited to the kitchen, but is also related to our lifestyle, weather and culture.

How did these dishes become so special?
Many popular dishes of India are made from years of exchange and movement of people. Alok Singh says, Irani and Mughal effects in Biryani of Hyderabad, but over time the soil, spices and tests of people made it desi. The kebab-korama of Lucknow also came out of the kitchen of the Nawabs and reached the common people.
