It is also called Begun Bhaja in the border areas of West Bengal and Jharkhand.
The owner of the stall Jagdish said that he has been in this work for the last 20 years and the most liked thing on his stall is the purple arc, which customers like a lot and also wait for hours to eat. Customers here can eat a piece purple arc with sauce and chutney for just ₹ 5. Apart from this, samosa and potato arc are also found here, which cost ₹ 5 and all are normal.

Regarding the recipe of becoming a purple arc, Jagdish said that he first brings fresh brinjal from the market and cuts it into thin slices. Then salt and turmeric are applied on it and finally wrap the brinjal in gram flour and fry them in hot oil and serve the customer with carrots, beets, cucumber, sweet sauce and mustard sauce.
