1 cup tide flour
1/4 cup wheat flour (optional)
Taste salt
1 tbsp oil or ghee
Hot water (to knead)

1/2 cup boiled potatoes or green peas (grated)
1 teaspoon cumin
1 teaspoon fennel (optional)
1 teaspoon ginger-green chili paste
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala
Taste salt
1 tbsp chopped green coriander
1 teaspoon lemon juice or mango
1-2 teaspoon oil (to fry)

Prepare the dough:
Mix well by mixing tide flour, wheat flour, salt and oil. Gently add lukewarm water and knead soft but hard dough. Cover it and keep it aside for 10-15 minutes.
Heat oil in a pan, add cumin and fennel. Add ginger-green chili paste and fry for a few seconds. Now add mashed potatoes or peas, turmeric, red chili powder, garam masala and salt and cook well for 2-3 minutes. Finally add green coriander and lemon juice/Amchur and let it cool.
Make Kachori:
Make small dough balls and flatten them. Keep stuffing in the middle and close the edges. Flain with light hands so that the dough does not torn.
