Recipe 1: Spicy onion pickle
Material:
- Onion – 250 grams (4 big onions)
- Garlic – 50 grams
- Green Chilli – 50 grams
- Ginger – 50 grams
- Raw mango – ½ kg (grated)
- Red Desi Chana – 1 Cup
- Mustard Oil – 1 Cup
- Turmeric powder – 1 tbsp
- Red chili powder – as per taste
- Yellow mustard – 1½ tbsp
- Fennel – 1 teaspoon
- Fenugreek seeds – 1 tsp
- Mangarel – 1 teaspoon
- Asafoetida – ½ tsp
- Salt – as per taste
Method:
- Wash and cut all the vegetables.
- Fry the spices and grind it coarsely.
- Wash and dry the gram.
- Mix all the ingredients in a bowl.
- Add oil and asafoetida, mix well.
- Keep 1 day in the sun, then fill it in the barni.
- After 2 days, the taste of pickle will increase further.
Recipe 2: Instant onion Pickle
Material:
- Onion – Cut into long slices
- Green chili – long chopped
- Green coriander – thick chopped
- Salt, red chili powder, turmeric
- Fennel, mango powder, chaat masala
- Mustard oil – heated
- Rye, fennel, asafetida – for tempering
- Lemon – 1
Method:
- Cut onion, chilli and coriander and put it in the bowl.
- Add all the spices and mix.
- Add rye, fennel, asafoetida and mix in the hot oil and mix it in the onion.
- Squeeze lemon and mix well.
- Ready to eat immediately.
Recipe 3: Simple onion Pickle
Material:
- Onion – Cut into 4 pieces
- Salt – as per taste
- Lemon – 1
- Vinegar – optional
- Red chili powder, turmeric
- Mustard oil – heated
Method:
- Cut the onion and add salt and spices.
- Add lemon or vinegar.
- Add hot oil and mix.
- Keep 1 day in the sun, then store.
