Lemon chutney without tomato or mint, ginger, green chillies, jaggery, black salt and roasted cumin are made of powder, tasty and healthy, the fridge remains fresh for 2-3 weeks.

First of all you need fresh, juicy lemon. Wash and dry about 8-10 lemons. Now instead of extracting their juice, cut them into small pieces. Keep in mind that do not forget to remove seeds because the seeds can cause mild bitterness in the sauce. After this, keep ginger, green chillies, a little jaggery or brown sugar, black salt, normal salt, red chili powder and roasted cumin powder ready. All these ingredients are necessary to give chutney spicy and sour-sweet taste.

Heat 1-2 teaspoons of mustard oil in the pan. After the oil is hot, add a pinch of asafetida and half a teaspoon of mustard seeds. As soon as the mustard starts crackling, add chopped green chillies and ginger and fry it lightly. Now add chopped lemon pieces and cook on medium flame for 4-5 minutes. This will balance the sourness of lemon and will bring texture like light jelly. After this, add salt, black salt, red chili powder and roasted cumin powder and mix well. To make the chutney sweet and sour, now add jaggery or brown sugar to it. If you want, you can also use honey instead of jaggery. After adding jaggery, cook on low flame while stirring for 7-8 minutes, so that the jaggery melts well and merges into the lemon pieces. When the chutney becomes a little thick and the oil starts floating up, turn off the gas. After cooling it, fill it in airtight glass bottle.
The taste of this lemon chutney seems wonderful with rice, paratha, puri or any snack. The special thing is that the vitamin C present in lemon strengthens your immunity, improves digestive power and also takes care of health with taste. If you want, you can also add light pepper to it, so that its flavor will become even more powerful. In winter or in summer, this lemon sour-sweet chutney doubles the fun of eating in every season.
