Material,
Paneer Balls (for Rasgulla),
- Full cream milk – 1 liter
- Lemon juice or vinegar – 2 tbsp
- Sugar – 1 cup
- Water – 4 cups
Rasa (Flavored Milk),
- Full cream milk – 1 liter
- Sugar – ½ cup
- Cardamom – 4-5 (crushed)
- Saffron – a pinch
- Chopped pistachios and almonds – 10-12
- Rose water – 1 tsp (optional)
Method of preparation,
1. Prepare Paneer (Chhena)
- Boil milk and add lemon juice.
- When the milk curdles, filter it in a muslin cloth.
- Wash with cold water and squeeze out excess water.
- Tie it in a cloth and hang it for 30 minutes so that all the water drains out.
2. Knead Chhena and make balls
- Knead chhena well for 8–10 minutes until it becomes smooth and soft.
- Make small round or flat discs.
3. Cook in sugar syrup
- Boil water and sugar in a wide vessel.
- Add chhena balls, cover and cook on medium flame for 12-15 minutes.
- They will swell and become spongy.
- Take out and cool.
4. Prepare flavored milk (juice)
- Cook the milk on low flame until it thickens.
- Add sugar, cardamom, saffron and rose water in it.
- Add chopped nuts also.
- Cool the milk completely.
5. Add Rasmalai to the juice
- Press the chhena tablets lightly and extract the syrup.
- Put them in cold milk and keep in the refrigerator for 2–3 hours.
6. Serve
- Garnish with pistachios and almonds on top.
- Serve chilled, it will add to the sweetness of Diwali.
tips,
- Do not dry the chhena too much, otherwise the rasmalai may become hard.
- Keep stirring continuously to prevent the milk from burning.
- Make Rasmalai in advance and keep it in the refrigerator. Both taste and texture will be better.
