In the holy month of Sawan, the glory of worship and fasting festivals is seen in every house. On such auspicious occasion, if some special and traditional sweets are made at home, then the fun of the festival doubles. Khambhat’s famous desi sweets Halvasan is one such recipe, which is not only wonderful in taste, but is also beneficial for health. This dessert made of milk, porridge, ghee, khand and dry fruits is a better option than adulterated sweets of the market.

As soon as the month of Sawan arrives, there is a splash of worship, fasting and festivals in the houses. If something sweet and special are made on such an occasion, then the fun of the festival doubles. It is very easy to make the famous sweets of Khambhat at home. It also protects you from adulterated sweets of the market.

To make Halvashan, you need full cream milk, porridge, ghee, khand, brown sugar, glue, almonds, cashews, cardamom powder and nutmeg powder. All the ingredients should be fresh and pure so that the taste of the dessert comes well.

Boil milk in a heavy bottom vessel. When the milk becomes slightly thick, add porridge to it and cook while stirring continuously. The porridge will slowly prepare a thick mixture by melting in milk.

Now heat ghee in a pan and fry the gum in it till it becomes golden and crisp. When the gum swells, remove it and cool it and grind it lightly.

Now add roasted gum and khand to a mixture of cooked milk and oatmeal. Cook this mixture until it starts releasing the pot and becomes thick like pudding.

Now add chopped almonds, cashews, nutmeg and cardamom powder. All these things give the dessert a special fragrance and taste, which makes Halvasan even more wonderful.

Apply light ghee in a plate and spread the prepared mixture in it. Allow it to cool so that it freezes well. When frozen, cut it into desired shape.

Halvasan is now ready to serve. It can be kept in airtight compartment for a week. When guests come on the festival, welcome them with this special desi sweets – both taste and health.
