When you boil milk daily, you can collect the frozen cream in an airtight compartment and keep it in the fridge. The cream can usually be kept in the fridge for 7 to 10 days. On keeping more days from this, sourness starts coming in it and sometimes it also starts to smell. If you want a good taste and fragrance of ghee, then try to process the accumulated cream within a week and take out its ghee.
How long should the cream be stored
If you have to store the cream for a long time, then it is better that you keep it in the freezer. The cream kept in the freezer is safe for about 20–25 days. However, after removing the freezer, it is necessary to melt the cream well before converting it into ghee. But keep in mind that the more time you store the cream, the more ghee’s quality and its fragrance will difference. Therefore, ghee made of fresh cream is always more fragrant and delicious.
How long should the cream be removed?
The right time to extract ghee from cream is when it starts getting mild or it becomes very thick. If you see that the cream is smelling smell or its color is turning yellow, then it should be taken out immediately. By keeping for a long time, the cream can rot and in such a situation, the ghee that comes out of it will not be able to eat it. Therefore, if you collect cream daily, then taking out its ghee between 7 and 10 days is the best way. This will give you pure, fragrant and long lasting ghee. On the other hand, if you want, you can remove cream ghee every third-fourth day, so that there is no hassle to store and always get fresh ghee.
