If you want to prepare granular milk cake at home, then first take about 3 liters of milk in a large mouthed vessel. If this vessel is made of iron, like an iron pan, then the results are even better.

After this, light the gas and first boil the milk on high flame. After boiling the milk, reduce the flame to medium.

Boil the milk until it thickens. After cooking for about 20 minutes, the milk will thicken and reduce. To prevent the milk from burning and sticking to the pan, keep stirring it continuously with a ladle.

After about half an hour the milk will reduce a little. After this, slowly add juice of ½ lemon so that there are grains in the milk. Keep in mind that while adding lemon juice, keep stirring the milk slowly, so that the milk curdles but does not form lumps.

After this, slow down the flame and continue cooking the milk. After some time, the milk will curdle completely and will start thickening, and its color will also start changing. Keep cooking it on low flame until it becomes very thick and reduced.

Keep stirring the milk continuously, otherwise lumps may form in it. When the milk thickens completely and starts drying up a bit, add about 1 cup of sugar to it and mix it slowly so that the sugar dissolves completely. Keep cooking it while stirring until all the milk dries up. After this add 4 tablespoons ghee and ½ teaspoon cardamom powder and mix well. Keep cooking the mixture until it starts leaving the pan. Now apply some ghee in a square shaped tray, place butter paper in it and put this mixture on top and set it well.

Now cover this mixture and keep it to cool for about 4 hours. You can also keep it in the refrigerator to set it properly. Add chopped pistachios for garnish. When it sets, cut it into your favorite shapes and serve it to guests on Diwali.
