Essential Material:
Besan – 2 cups
Green chillies (thick) – 2 to 3
Onion – 1 cup (finely chopped)
Celery – 1 tsp
Hot Masala – 1/4 tsp
Asafoetida – 1 pinch
Baking Soda – 1 pinch
Red chili powder – 1/4 tsp
Kasturi Fenugreek – 2 Pinch
Salt – as per taste
Oil – to fry
To make water – solution
Method of making filled dumplings:
-First of all, wash and clean thick green chillies thoroughly. Now put a long incision in the middle of the chillies and remove the seeds inside so that it is ready for stuffing.
Now add onion, celery, asafetida, salt, red chili powder and garam masala in a vessel and mix well. This will be your spicy stuffing.
Now take gram flour in another vessel for gram flour solution. Prepare a smooth solution by adding salt, baking soda, musk fenugreek and water as per the need. The solution should not be too thin, nor too thick.
Now fill the spices in the prepared chillies and then dip them well in gram flour solution and coat them well.
Heat the oil in the pudding and fry these filled chilies on medium flame till the pakoras turn golden and crisp.
Fry the pakoras and take it out on the tissue paper so that the extra oil is removed.
