According to Pankaj Bhadoria, by adding nutmeg powder to moong dal halwa, its taste reaches a different level. Nutmeg not only balances its sweetness, but the medicinal properties present in it also make Halwa beneficial for health. So whenever you make moong dal pudding, in the end, mix a pinch of nutmeg powder. This will improve both the fragrance and taste of halwa.
Essential ingredients to make moong dal pudding
Moong Dal – 1 cup (soaked overnight)
Desi Ghee – ½ cup
Milk – 2 cups
Chinese – 1 cup
Saffron – Some threads
Cardamom Powder – ½ tsp
Nutmeg powder – 1 pinch
Dry Fruits – Chopped (Cashew, Almond, Pistachio)
How to make traditional moong dal pudding
First of all grind the soaked moong dal. Keep in mind that while grinding, use water greatly so that it becomes a coarse paste. Now heat ghee in a heavy bottom pan and add moong dal paste and fry it on medium flame. Keep stirring continuously so that the lentils do not stick to the bottom and gradually its color becomes golden and the scent starts coming. When the lentils are well roasted, then add milk and saffron threads to it. Cook it on low heat until the milk is completely absorbed. Now add sugar to it and keep stirring continuously. After the sugar dissolves, the pudding will look slightly thin but gradually it will become thick. Now finally add cardamom powder and nutmeg powder to it. Also, mix chopped dry fruits and cook for 2 minutes. Get ready, hot, aromatic and extremely delicious moong dal pudding.
