To make uttapam, first you need a dosa or idli batter. If you do not have a prepared batter, soak rice and urad dal overnight and grind it and let the yeast rise for 8-10 hours. Now to increase the taste, add a little salt to it. This batter is the foundation of uttapam.

After this, the work of preparing topping comes. Fine onion, tomato, capsicum, green chillies and green coriander finely chop. If you want, you can also add carrots and cabbage to it. This not only enhances the color but also increases nutrition. Now heat the non-stick griddle on the gas and put a little oil on it and put the batter. Keep in mind that uttapam is not thin like dosa but is slightly spread.

When the golden color starts coming from the bottom, then decorate the topping of the vegetables from the top and put it on a little oil on the edges. Press the topping lightly to stick it to the batter. Then cover it and cook on low flame, so that the vegetables become light crisp and tasty. If you want, you can also sprinkle a little black salt or chaat masala.

In a few minutes, hot uttapam is ready. Serve it with coconut chutney, tomato sauce or sambar. The taste will be such that every morsel will touch your heart. The special thing is that the vegetables put in it make it healthy and it is perfect for the morning breakfast or evening snack.
