Jitiya fast mothers keep their son’s long life, good health and happiness and prosperity. This fast is observed on the Ashtami date of the month of Bhadrapada and it is considered very rigid.

This year, Jitia fast will be celebrated on 14 September, Sunday. The tradition of Nahai-Khay will be played on 13 September, Nirjala will be fasted on 14 September and the fast will be completed with Paran on the morning of 15 September.

Jitiya fast has special recipes, of which August flower dumplings are prominent. This dish is considered delicious as well as religious and medicinal terms and helps protect the body from infections.

August 10 flowers are required to make pakoras of August flower. The flowers are cleaned and their stalks and hard parts are removed, so that the pakoras become soft and tasty.

1 cup gram flour is taken for this. For taste and digestion, half a teaspoon of celery is added to it. A quarter teaspoon turmeric powder is added to increase the light yellow color and taste.

Half a teaspoon of red chili powder and salt are added to the taste in the spices. Water and oil are required to cook to make a solution. The solution is neither too thin nor too thick, this is taken care of.

First of all prepare gram flour and spices solution. Dip the flowers in August and put it in hot oil and fry them till they become golden and crisp on both sides. After additional oil absorbs, hot-hot pakoras are ready to eat.
