Instant Pyaj Ka Achaar Recipe: If there is spicy onion pickle with food then the taste doubles. It is so easy to make that you can make it every few days and eat it immediately. It tastes best with dal, rice and parathas.

If you are fond of eating something spicy and tangy with your food, then onion pickle will double the taste of your food. The special thing is that this pickle is prepared instantly and does not spoil for a long time. Let us know the method of making it easily at home.

To make onion pickle, first prepare the ingredients. For this you need – 250 grams small sized onion, 2 tablespoons mustard oil, 1 teaspoon mustard, 1 teaspoon nigella seeds, 1 teaspoon fenugreek seeds, 1 teaspoon fennel, 1 teaspoon turmeric powder, 1 tablespoon red chili powder, salt as per taste and half lemon or vinegar. Even if you don’t have small onion, cut the normal onion into strips. Peel the onions, wash them with clean water and dry them with a cloth so that there is no moisture left in them.

Now add mustard oil in a pan and heat it until light smoke comes from it. Turn off the gas and let the oil cool down a bit. When the oil remains lukewarm, add mustard seeds, nigella seeds, fenugreek seeds and fennel seeds. Let them crackle for a few seconds so that their aroma comes out. Now add turmeric and red chili powder to it and mix well. Be careful that the spices do not burn.

Now put the prepared onion in a clean dry vessel and put the prepared spices on top. Mix it well so that the spices get evenly coated on every onion. Now add salt and lemon juice or vinegar as per taste. By adding vinegar, the pickle remains safe for a long time and also gets a slight sourness in taste.

Fill the prepared pickle in a clean, dry and airtight glass bottle. Keep it in the sun or at room temperature for a day so that the onion absorbs the spices properly. From the next day itself, you can enjoy this delicious instant onion pickle with paratha, dal-rice or puri. Some people even start eating it immediately because there is no raw-cooked system in it.
