Soybean is considered an excellent source of protein for vegetarian people. Many dishes made from soybean are popular in Jharkhand, among which people especially eat soybean kebab with great enthusiasm. This recipe is nutritious as well as delicious.

According to artisan Mohan Murari of Janata Dhaba, Hazaribagh, making soybean kebab is very easy. This recipe uses less oil and mild spices. Despite this, the taste of kebab is so amazing that it easily attracts everyone.

Explaining the method of making soybean kebab, the artisan said that first of all the soybean is softened by boiling it in hot water. After this, it is pressed well to remove all the water inside it, so that the process of making kebabs can begin.

The artisan told that after removing the water from soybean, it is put in the mixer along with boiled black gram and onion. Then, all these are slightly coarsely ground or ground, so that the kebab has a good texture.

According to the artisan, this mixture is now taken out in a vessel. Add gram flour, green chilli, onion, ginger-garlic paste, turmeric, salt, cumin, black pepper and garam masala and mix well. Keep in mind that the mixture should remain hard, so that it does not stick to the hands while making kebab balls.

The artisan told that now small round kebabs are made from this mixture. After this, these balls are flattened and baked on a hot tawa or non-stick pan, thereby preparing this delicious soya kebab.

The artisan told that when kebabs are baked for 8 to 10 minutes, they become crunchy from outside and soft from inside. After being completely cooked, they have to be taken out, sprinkled with lemon juice and served.

The artisan told that these delicious soya kebabs are served with mint and coriander chutney or curd. These kebabs made with less oil are not only delicious, but are also considered very good for health because they are rich in protein.
