  • Ginger – Small piece (finely chopped)
  • Roasted peanuts – a fist (crushed)
  • Salt – 1 teaspoon (fasting rock salt is better)
  • Black pepper – 1 teaspoon (ground)
  • Ghee or oil – to bake
Method of preparation

Step 1: Prepare Sabudana

First take 1 cup of sabudana and soak it in water for 2 hours. Then filter it and wash it thoroughly, so that the sticky comes out and the sabudana becomes light and soft.

Step 2: Add potatoes and cheese

Now put sabudana in a big bowl. Add a boiled and mashed potato or sweet potato to it. Along with this, add 1 cup grated cheese. This mixture will help in tying pancakes and will also enhance the taste.

Step 3: Add flavating

Now add a handful of chopped green coriander, a green chilli and finely chopped ginger. They will bring mild pungency and fresh flavor in pancake.

Step 4: Peanuts and Spices

Fry a handful of peanuts lightly and grind it and put it in the mixture. Peanuts make pancakes crisp and healthy. Now add 1 teaspoon of rock salt and 1 teaspoon pepper and mix well.

Step 5: Prepare Dough

Mix everything and knead like a flour. Make small shells from this and then press them with palm and shape the pancake. If you want, you can apply a little ghee or oil to grease your hand.

Step 6: Bake on PAN

Heat a non-stick pan and add some ghee on it. Now bake the pancake from both sides till it becomes golden and crisp. Cook each pancake for about 2-3 minutes.

Serving gathering

Serve hot-hot sabudana pancake with curd, green chutney or mint-money dip. If you want, you can also eat it with fruit salad or coconut chutney.
