Raipur Street Food: Sigdi Dosa found at Jai Pillar Chowk in Raipur is winning the hearts of people. This dosa is made from semolina-basan on coal flame, which tastes its taste separate and desi from the normal dosa.
Jairam Paswan, who makes Sigdi Dosa, says that he prepare about 30 to 40 different desi doses. These include names like Masala Dosa, Paneer Masala Dosa, Cheese Masala Dosa, Jini Dosa, Mysore Masala Cheese Dosa and Kerala Masala Dosa. He says that the taste and traditional style of these doses attracts people the most.
Keeping in mind the choice of customers, Jairam prepares every dosa in a special way. Sejwan Dosa is special for those who like spicy. At the same time, there is a temper of beetroot in Kerala and Mysore Masala Dosa. Potatoes and onions are stuffed in traditional spice dosa, while the most popular genie dosa tastes capsicum, cabbage, sezwan, butter and cheese.
