To make Chhena, first heat milk in a deep non-stick pan. Let it boil and then turn off the flame. After waiting for a minute, slowly add lemon juice and keep stirring gently.

Let the milk sit for about half a minute to curdle. The milk will curdle and the whey will separate. When whey becomes clearly visible, it is a sign that the milk has completely curdled.

Strain all the whey using a clean wet muslin cloth. Then fold all the four edges of the muslin cloth and slowly rotate it so that the remaining whey comes out. After this remove the remaining whey.

Take chhena in a muslin cloth and keep it in a bowl of fresh water and wash it 2 to 3 times. To remove excess water, tie the cloth and hang it for 30 minutes. After this use the prepared chhena immediately.
