Material:

  • Full cream milk – 1 liter
  • Lemon juice or vinegar – 2 tbsp
  • Sugar – 1 cup
  • Ghee – 2 tbsp
  • Cardamom powder – ½ tsp
  • Pistachios or almonds – 2 tbsp (for garnishing)

Method of making:

  1. Tearing Milk:
    First of all, boil the milk in a heavy bottom pan. When it boils, reduce the flame and slowly add lemon juice or vinegar. The milk will start curdling and will become chhena.
  2. Filter Chhena:
    Strain the curdled milk through a muslin cloth and tie it in a cloth and hang it to remove excess water.
  3. Cooking Chhena:
    Heat ghee in a non-stick pan. Add chhena in it and cook on low flame while stirring for 5-6 minutes.
  4. Adding Flavor:
    Now add sugar and cardamom powder into it. Mix well until the mixture starts leaving the pan.
  5. To set:
    Grease a steel plate or tin with ghee. Spread the mixture in it and add chopped pistachios or almonds on top. Press gently.
  6. chill:
    Cool it by keeping it at room temperature for 2-3 hours or in the refrigerator. Then cut into desired shapes and serve.

Suggestion:

  • Use only full cream milk for creamy taste.
  • Adding saffron improves both the color and taste.
  • Do not overcook chhena otherwise the sweet may become dry.
