Here is absolutely traditional and easy Milk Simmis Recipe of:

Ingredients (for 2-3 people):

  • Sevia (roasted): 1 cup

  • Milk: 1 liter (full cream)

  • Ghee: 1-2 tablespoons

  • Chinese: 4-5 tablespoons (as per taste)

  • Cardamom Powder: ½ tsp

  • Dried dry fruits (almonds, cashews, pistachios, raisins): 4 cups (chopped)

  • Saffron thread (optional): some threads

  • Rose water or Kevada water (optional): 1 tsp

Method:

  1. To roast the sevians (if not already roasted):

  • Heat ghee in a heavy bottom pan.

  • Add sevaiyas and fry on medium flame till it turns golden brown.

  • Keep separate after roasting.

  • Boiling milk:

    • Add milk to a deep pan and let it boil.

    • Light the heat and cook for 10-15 minutes so that the milk becomes slightly thick. Keep stirring in between so that it does not fall into the bottom.

  • Mixing services:

    • Now add roasted sevaiya in boiling milk.

    • Cook for 5-7 minutes until the services are soft.

  • Sweetness and Taste:

    • Now add sugar to it and let it dissolve.

    • Cardamom powder, saffron (if using), and add dry fruits.

    • Cook 3-4 more minutes.

    • If you want, you can add a few drops of rose water or Kevada water.

    • Turn off the gas.

    Method of serving:

    • You can also serve hot.

    • Cold and keep it in the fridgeThe taste of both is different but wonderful.

    Tips:

    • If you like more creamy then cook the milk for a long time.

    • If the services are thin, they cook quickly, do not cook for long or else it will become like pulp.

    • If you want to make sugar-free, use honey or date syrup instead of sugar.
