1. Tricolor dhokla

Material:
  • Besan – 1 cup

  • Water – 1/2 cup

  • Lemon juice – 1 table spoon

  • Sugar – 1 tsp

  • Salt – as per taste

  • Eoo (Fenning) – 1 tsp

  • Oil – 1 table spoon

  • Fenugreek leaves (for green layer) – Make a paste

  • Turmeric powder (for saffron/golden color) – 1/4 tsp

  • Green coriander paste (for green layer)

  • Carrot paste (for color in the middle of white)

Method:
  1. Make a solution by mixing gram flour, curd, water, salt, sugar, and lemon juice.

  2. Add fencing (eno) and mix slowly. The solution will be light and bloated.

  3. Now divide the solution into three parts.

  4. Make saffron color by adding turmeric powder to one part.

  5. Add fenugreek or green coriander paste to the second part, which brings green color.

  6. Keep the third part without color (white).

  7. First steam a few minutes by adding saffron (yellow) solution to a steamer.

  8. Then add white solution and steam again.

  9. Finally, steam again by adding green solution.

  10. Garnish the prepared tricolor dhokla with oil and add green coriander over it.

2. Tricolor idli
Idli is the traditional dish of South India. It can also be made in three colors and tricolor can be made.

Material:
  • Idli batter (mixture of rice and urad dal) – 2 cups

  • Turmeric powder – 1/4 tsp

  • Spinach Paste – 2 Table Spoon

  • Beat Root Paste – 2 Table Spoon

  • Salt – as per taste

  • Divide the idli batter into three parts.

  • Put turmeric powder in one part and make yellow color.

  • Make green color by adding spinach paste to the second part.

  • Make red color by adding beat root paste to the third part.

  • First of all put yellow batter on the idli stand.

  • Then add white (original batter) layer.

  • Finally add green layer.

  • Steam in idli cooker for 10-12 minutes.

  • Serve hot tricolor idli with coconut chutney or sambar.
